Lemon Meringue Pie
Infused with 30mg of THC
On his day off, our very own Billy King brought in these beautiful Lemon Meringue Pies that he made from scratch. Each pie is infused with 30mg of THC.
Cookie Base: butter, flour, sugar, egg yolks, salt, baking powder. Lemon Curd: fresh lemon juice, butter, egg yolks, sugar. Italian Meringue: sugar, water, egg whites and tangy Candied Lemon Zest.
The cookie dough is made then chilled, rolled, cut and baked. The lemon curd is cooked and then set in ring molds. The Italian meringue is boiled sugar syrup whisked over egg whites with candied lemon zest crystallized in sugar.
And yes, they tasted just as good as they look!
About Billy King
Billy was born and raised in Niagara-on-the-Lake on a cherry farm. He attended the Culinary Arts Program at Niagara College in 2002 and fell in love with pastry/baking.
Billy has extensive experience working in the Niagara Region, including the Hildebrand Winery, Peller Estate and the Ravine Vineyard Estate. He also has international culinary experience working at the prestigious, Le Manoir aux Quat Saison in London, England from 2005-2010.
Billy has been part of Niagara Herbalist family since April, 2019.
